I love making my own versions of popular shop bought biscuits. These Jammie Dodgers are absolutely delicious and are pretty simple to make.
You can change them up by using different cutters and jams or curds. I have gone for traditional raspberry conserve but I think they would be amazing with lemon curd.
To make these biscuits you will need:
- 100g Butter, softened
- 175g Caster sugar
- 1 Free-range egg
- 1 tsp Vanilla extract
- 200g Plain flour
- Jar of your favourite jam or curd
- Baking sheets greased with butter & lined with baking paper
- Pre-heat oven to 190C/Fan 170C/Gas mark 5
You can make these delicious biscuits with just a large bowl and a wooden spoon, or you can use a stand or hand mixer.
- Firstly, beat together the softened butter and sugar until it is well blended together.
- Then add the egg and vanilla extract, keep beating until it is all incorporated.
- Fold in the flour, you may need to use your hands to bring the mixture together to form a dough
- Roll out the dough to approximately 5mm thick. I find that the easiest way to do this is between two sheets of greaseproof paper. That way the dough doesn't stick to the worktop or the rolling pin
- Cut out your cookies using whichever cutters you fancy. If you would like to see the filling you will need a smaller cutter to cut the middles of the biscuits out.
- Place the biscuits on the lined baking tray making sure they are well spaced out.
- Pop the tray into the fridge for 10 minutes whilst the oven preheats.
- Bake for 7-10 minutes, please rmember that the timings will vary depending on the size of the biscuits. They are ready when the edges are starting to brown.
- Allow to cool for a few minutes and then transfer to a cooling rack to harden up.
- Once the biscuits are cool, add a spoonlful of jam and sandwich them together with their partner
- Add a sprinkle of icing sugar, Enjoy!
